Our blog and review of the champagne buffet brunch at the SKAI Bar and Restaurant, Swissotel The Stamford

Located on level 70 of the Swissotel The Stamford is the newly re-opened SKAI bar. While there are many rooftop bars and restaurants in Singapore, it's hard to compete with the view you get here. Upon entering you will witness a completely unblocked and iconic view of Marina Bay and the entire city, visible from every seat in the restaurant.

We visited for the 12 pm - 3 pm seating of Saturday's SKAI Champagne brunch. We arrived to hear a DJ playing chilled out music, amazing views and modern decor. We sat along the bar, which had comfortable seat back chairs and offered some of the best skyline views.

Choosing to sit by the bar was a very wise (or un-wise depending on how you see it) decision our part as it meant our glasses were constantly re-filled during the brunch. The staff were incredibly attentive to ensuring we always had a drink in hand.


The full drink package including Taittinger Brut Reserve NV Champagne was $148. Excluding champagne and opting for wine, beer and cocktails the package was $124. Andrew opted for Champagne package, during the 3 hours he would have managed to finish at least a bottle. I stuck to white wine and sampled a selection of the cocktails. The menu had 5 to choose from, plus espresso martinis and sangria at the buffet area. My personal favourite was the espresso martini.

The foods included in the package was a mix of buffet selection and unlimited hot and cold dishes from the menu.


The savoury buffet at SKAI - A few of our highlights for the buffet included the cold cuts and cheese, as well as the tuna and salmon sashimi sushi. There was also a large selection of fresh seafood including prawns, crab and oysters.


After the savoury buffet, we ordered all four of the cold dishes on the menu. We started with the two vegetarian options on the menu. First was the Cauliflower, Apple, Toasted Almonds, Black Truffle,  this was a dish full of textures with syrup preserved mini apples and toasted almonds and a strong flavour of the truffle sauce. Next was the Burrata salad, topped with zesty orange and balsamic, this was a refreshing option to start with. We then moved onto the two cold meat dish selections. First was the Yellowfin Tuna with avocado, as a lover of all things Sashimi this was my personal favourite of the cold dish selections. Andrews favourite was the Wagyu beef tataki, topped with truffle and a similar flavour sauce to the cauliflower dish.

After the cold dishes, we moved onto the hot dishes. There was a selection of 5 to choose from, including a seafood waffle, a chicken thigh dish, steak and fries and pork belly. All were amazing, and we were exceptionally full after tasting these. Our highlight was the pork belly, which we ordered two portions of it was so good.

No matter how full you are there is always room for dessert (as we always say it sits in a separate part of your stomach). There was so much to choose from here we don't know where to begin. Our highlights were the chocolate-filled sugar doughnuts and ruby chocolate fondue.
